No Bake Muslei Bar – My Way

I love to have these on hand when we are doing a long road trip as I tend to get a bit peckish as we drive along, but don’t want to stop and eat junk food. They store well in the fridge and that’s where I leave them. But when we stop for a wee break 🙂 then I can always hop into the caravan and grab a couple to stop my hunger pangs.

NO BAKE MUSLEI BARS

½ cup creamy natural drippy peanut butter (I usually get my peanut butter from the wholefoods store)

1 1/2 tablespoons virgin coconut oil (melted)

3 tablespoons honey (or maple syrup)

1 tsp vanilla extract

½ tsp cinnamon

½ cup flaxseed seeds

1 tbs chia seeds

1 cup Medjool dates chopped roughly

1 cup sesame seeds

1/2 cup Pepito seeds

½ cup old rolled oats

½ cup almonds, roughly chopped

¼ cup unsweetened shredded coconut

1 tsp Cacao

Combine peanut butter, coconut oil, honey, vanilla and cinnamon to a medium saucepan and place over low heat. Stir until the mixture is smooth and creamy. Remove from heat and immediately stir in all other ingredients accept the sesame seeds and maybe a few almonds until combined.

Then pour the mixture into a pan lined with baking paper. Press some almonds and sesame seeds into the top and then it’s ready to go into the fridge for a few hours. Cover with alfoil and leave and come back and just enjoy the goodness.
