Sweet Potatoe Quiche

RECIPE:
Spinach, Kale and Feta Quiche with a Sweet Potatoe crust.
Enough sweet potatoe cut into slices. Enough to cover the bottom of the dish and sides.

1 small white onion, diced
1 tomato, diced
A handful of spinach and kale to please
3 large mushrooms
6 large eggs
1/3 cup unsweetened almond milk
1/2 cup goat cheese crumbles (or sub feta)

Cut the sweet potatoe and line a pie dish or pan. I put baking paper in my dish and then wiped some coconut oil on the base. Then lined the dish with the sweet potato and then sprinkled garlic granules, black pepper and chili flakes over the top. Then cooked it in the oven for about 20 minutes on 375 degrees or until cooked.

In a pan with a little more coconut oil or whatever oil you use, cook onion, mushrooms, spinach, kale and tomatoes until the spinach and kale wilt. Then let it cool.

Then combine eggs, almond milk and feta cheese. Add what ever spices you like as well as black pepper and a little salt.

Spread the onion mixture over the sweet potatoe followed by the egg mixture. Bake in the oven for about 30-45 minutes or until you are happy that it’s done.
