Thai Green Prawn Rissoles

Graeme made these delicious prawn rissoles for my birthday after we bought some fresh green prawns when we were in Bowen from Birds Fish Bar. These are great as a main meal with salad or just as they are with a drop of your favourite beverage.

Ingredients:

Makes about 8 rissoles.

  • 6 Green Prawns 
  • 6 Garlic cloves chopped finely
  • 1 cm Ginger grated
  • 1 Birdseye Chilli chopped finely
  • 1 cm Turmeric grated
  • Black Pepper to your liking
  • Coriander again to your liking
  • 1 Spring Onion chopped roughly (optional)
  • 1 Egg
  • Enough Grated cheese to bind
  • Panko bread crumbs for coating
  • Plain flour for coating
  • Sesame seeds also for coating
  • Sesame oil for cooking.

Roughly chop prawns into half centimetre pieces. Place in a bowl and add the chopped and grated ingredients. Garlic, turmeric, Birdseye chilli, ginger and chopped spring onion. Add black pepper and coriander. Mix through all the ingredients and combine with egg and cheese. Pat ingredients into patties. Combine the Panko bread crumbs and plain flour on a plate and coat each patty and then sprinkle with sesame seeds.

Heat sesame oil in the pan and cook on a moderate heat until patties brown. 

The smell of these delicious prawn rissoles will drive your neighbours mad. Now it’s time to sit down and enjoy.
