Roast Chicken and Veg

We love our roast chicken dinners and we either cook it in the convection oven or the Weber BBQ. What is great about these two cooking devices is that we can basically put everything in and sit back and relax with a beverage while watching the sunset. I can’t think of anything better.

Ingredients

1 x Whole chicken

2 x Potatoes

1 x Carrott

1 x Brown Onion

Pumpkin

Zuchinni

Capsicum

Herbs and spices

Coconut oil or if you prefer Olive oil.

Salt

This is so easy. Rub the chicken with oil and any herbs and spices that you desire. We usually scrub to potatoes or sometimes one sweet potato and then cover it with a bit of oil. Same for all the other veggies.

Put the chicken with the potatoes in either the Weber BBQ or convection and cook on a high heat for around an hour. Then check to see how it is all going :).

Place the other veggies in alfoil and sprinkle with your desired herbs and spices. Place in the Weber or convection oven and cook for another 30 minutes or until all is cooked.

Serve it with whatever takes your fancy but we do like a nice home made gravy.

So sit back and enjoy and watch how your neighbours are also enjoying the tantalising smells that are coming from your Weber or convection. It’s always a talking point.
